立春是二十四节气中的第一个节气,寓意春天即将到来,万物复苏。自古以来,立春就是一个非常重要的节日,迄今为止已形成了多种传承下来的风俗习惯,当然还有顺应这个节气的风俗食物,正所谓“一年之计在于春”。时值立春,怎能不咬春。“咬春”这个习俗,最早源于古人在立春这一天,采食萝卜、姜、葱等一些春天新萌发的辛味蔬菜,既让身体顺应天时,防时疫,又有迎接新春的意味。而后逐渐发展演化为立春食用春饼和春卷的食俗。
