目的调查市售各类肉鸡产品沙门菌污染情况,为沙门菌所致食物中毒的流行病学调查和防控提供科学依据。方法采集市售鸡肝、鸡心和鸡胸,进行沙门菌分离培养、生化鉴定和血清分型。结果 2013年共检测样品331份,检出沙门菌89株,检出率为26.89%,鸡肝、鸡心、鸡胸的检出率分别为37.56%(77/205)、11.11%(11/99)和3.70%(1/27)。89株沙门菌分离株共分为10种血清型,优势血清型为肠炎沙门菌、印第安纳沙门菌、山夫登堡沙门菌。其他血清型有肯塔基沙门菌、Rissen沙门菌、Redba沙门菌、Fillmore沙门菌、鼠伤寒沙门菌、甲型副伤寒沙门菌、鸡-雏沙门菌。农贸市场和超市采集的鸡肝样品沙门菌阳性率差异无统计学意义。结论沙门菌广泛存在于市售各类肉鸡产品中,沙门菌血清型别呈多态型分布,且有地区特异性,有引起食物中毒的风险。
Objective To investigate the contamination of Salmonella in various types of broiler products on the market and provide a scientific basis for the epidemiological investigation and prevention and control of food poisoning caused by Salmonella. Methods Commercial chicken liver, chicken heart and chicken breast were harvested for isolation and culture of Salmonella, biochemical identification and serotyping. Results A total of 331 samples were detected in 2013, with 89 strains of Salmonella detected, the detection rate was 26.89%. The detection rates of chicken liver, chicken heart and chicken breast were 37.56% (77/205) and 11.11% (11/99) respectively. And 3.70% (1/27) respectively. 89 strains of Salmonella isolates were divided into 10 kinds of serotypes, the dominant serotypes of Salmonella Enteritidis, Indiana Salmonella, Salmonella Saunders. Other serotypes are Salmonella Kentucky, Salmonella Rissen, Salmonella Redba, Salmonella Fillmore, Salmonella typhimurium, Salmonella paratyphi A, and Salmonella chick-tachyzoites. No significant difference was found in the positive rate of Salmonella in chicken liver samples collected from farmers’ markets and supermarkets. Conclusion Salmonella is widely distributed in various types of broiler products. Salmonella serotypes are polymorphic and have regional specificity, which may cause food poisoning.
