水磨丝是陕西省东府大荔县的传统佳肴,据传是由唐代韦巨源《烧尾食单》中的“羊皮花丝”演变而来。水磨丝被烹饪界誉为刀工的典范、低档料高档菜的榜样。
Shui Shusi is the traditional delicacy of Dali County in the east of Shaanxi Province. It is rumored to have evolved from the “sheepskin filigree” in Wei Yao Yuan’s “Scallop” in the Tang Dynasty. Shui Shisi is the culinary industry as a model knife, low-grade material example of high-grade food.
