目的对食源性致病菌单核增生李斯特菌进行监测,了解甘肃省即食食品中单核细胞增生李斯特菌的污染状况及分布,并确定高危即食食品的种类。方法按中国疾病预防控制中心营养与食品安全所建立的全国食品污染物监测网的食源性致病菌监测部分操作,2007~2011年从甘肃省14个市(州)农贸市场、超市及酒店餐馆采样,并监测十大类(生食水产、熟肉制品、凉拌菜、即食非发酵豆制品、冰激凌、速冻熟制米面、生食蔬菜、地方特色米面食品、鲜榨果蔬汁、糕点饼干)食品,共计4 447份。结果 4 447份十大类产品中共检出单核细胞增生李斯特菌88株,总检出率为1.98%;糕点饼干未检出,冰激凌检出率达8.33%,其次是凉拌菜(3.14%)、非发酵豆制品(2.56%)、生食蔬菜(1.80%)、地方特色米面(1.73%)、速冻米面制品(1.52%)、熟肉制品(1.35%)、生食水产品(1.09%)、鲜榨果汁(0.70%);不同季节无显著性差异;全省14个市(州)检出率最高的是嘉峪关市,为5.45%,其次为定西、白银,分别为4.55%,2.91%,检出率最低的是陇南市为0.46%;单核细胞增生李斯特菌定量检测,菌落数在0.3~10 MPN/g占72.41%,10~100 MPN/g占20.69%,100~200 MPN/g占9.52%。结论甘肃省即食食品中单核细胞增生李斯特菌的污染严重,14个地(市)中嘉峪关、定西、白银检出率较高;十大类食品中冰激凌、凉拌菜、非发酵豆制品污染单核增生李斯特菌严重。
Objective To monitor the foodborne pathogenic bacteria Listeria monocytogenes to understand the status and distribution of Listeria monocytogenes in ready-to-eat food in Gansu Province and to identify the types of high-risk ready-to-eat foods. Methods According to the operation of foodborne pathogenic bacteria monitoring by the National Food Contaminant Monitoring Network established by the Center for Nutrition and Food Safety of China Center for Disease Control and Prevention, from 2007 to 2011, 14 farmer’s markets, supermarkets and hotels in Gansu Province Restaurant sampling and monitoring of the top ten categories of raw food, aquatic products, cooked meat products, cold dishes, instant non-fermented soy products, ice cream, frozen cooked rice noodles, raw vegetables, local specialty rice noodles, freshly squeezed fruit and vegetable juices, A total of 4447 copies were received. Results 88 strains of Listeria monocytogenes were detected in 4 447 ten categories of products with a total detection rate of 1.98%. Pastry cookies were not detected, the detection rate of ice cream was 8.33%, followed by cold salad (3.14% ), Non-fermented soy products (2.56%), raw vegetables (1.80%), local specialty rice noodles (1.73%), frozen rice products (1.52%), cooked meat products Fresh fruit juice (0.70%). There was no significant difference in different seasons. The highest detection rate was found in 14 cities (Jiayuguan) in the province, which was 5.45%, followed by Dingxi and Baiyin, accounting for 4.55% and 2.91% The detection rate is the lowest in Longnan 0.46%; Listeria monocytogenes quantitative detection, the number of colonies at 0.3 ~ 10 MPN / g accounted for 72.41%, 10 ~ 100 MPN / g accounted for 20.69%, 100 ~ 200 MPN / g accounted for 9.52%. Conclusion The contamination of Listeria monocytogenes in ready-to-eat food in Gansu province was serious. The detection rates of Jiayuguan, Dingxi and Baiyin were higher in 14 prefectures (cities). The contamination of ice cream, salad dressing and non- Listeria monocytogenes serious.
