近年来,部队为了防暑降温,自制冷饮食品的单位逐渐增多,但由于设备简陋,工艺流程和生产布局不合理,所以产品卫生质量很差,如1983年军区抽查了8个单位16份样品进行卫生细菌学检验,合格的只有1个单位4份样品,产品合格率仅占25%,合格的单位只占12.5%。冷饮食品是直接入口食品,如果产品卫生质量不合格,将影响广大指战员健康。为此,1984年5月我们在某部进行了小型冷饮(冰棍)生产三化研究。现简报如下。改建前情况该部冰棍生产间在全区部队中是条件较差的,主要存在以下几个问题: 一、生产布局不合理,卫生设备不齐全 1.生产人员无更衣室、手洗消设备和脚消毒池;2.生产布局不分原料间、熬料间、配料间、生产间、冰库和店堂等,全部生产和销售都在一间破旧的老式房子内进行;3.室
