1997年4月14-18日 FAO 和 WHO 联合在罗马召开了关于碳水化物的专家组会议,《人类营养中的碳水化物》一书是根据此次会议内容编辑而成的。本书全面反映了近年来碳水化物在基础研究及应用研究方面的新进展和新发现。对于碳水化物,全书从分类及命名、生理功能及此类食品的选择和摄入三个角度进行了沦述。其中着重介绍了膳食纤维概念的修订,血糖生成指数的定义、分析方法及其在碳水化类食物选择中的应用。对于碳水化物的生理功能,特别是抗性淀粉、不消化寡糖在小肠中的消化及在结肠中的发酵特性进行了详细介绍,此外还介绍了碳水化物在预防多种慢性病,如糖尿病、心血管疾病及癌症中的重要作用。
April 14-18, 1997 FAO and WHO jointly convened an expert group meeting on carbohydrates in Rome. The book Carbohydrate in Human Nutrition was compiled based on the conference.
