通过体外实验,研究菊米提取物清除亚硝酸根和抑制N-亚硝基二乙胺(NDEA)生成的能力。结果显示:在pH3.0条件下,菊米提取物对亚硝酸盐的清除率和对NDEA生成的抑制率与粗提物的浓度、反应温度及前4 h的反应时间呈正相关;当pH为2.0~4.5时,清除率及抑制率与pH呈负相关,pH大于5.0时,NDEA的抑制率主要受pH值影响。结论:在弱酸性条件下,菊米提取物是一种良好的亚硝化反应抑制剂,对降低亚硝酸盐毒性具有较好的参考应用价值。
In vitro experiments were conducted to investigate the ability of extract of kumquat to remove nitrite and inhibit the production of N-nitrosodiethylamine (NDEA). The results showed that under the condition of pH3.0, the clearance rate of nitrite and the inhibition rate of NDEA production were positively correlated with the concentration of crude extract, the reaction temperature and the reaction time before 4 h. When the pH was From 2.0 to 4.5, the clearance rate and inhibition rate were negatively correlated with pH. When the pH was above 5.0, the inhibition rate of NDEA was mainly affected by pH value. Conclusion: Under weak acid conditions, the extract from Chrysanthemum indicum is a good inhibitor of nitrosation and has a good reference value for reducing nitrite toxicity.
