目的调查云南省外卖配送餐中的细菌污染情况,为云南省食品卫生监控提供依据。方法根据《2014年云南省食品安全风险监测方案》,采用国家标准规定的检测方法,对云南省16个地州市方外卖配送餐进行卫生指标菌和常见食源性致病菌检测,对其结果进行分析。结果 435份样品中,卫生指标菌不合格率为43.45%。蜡样芽胞杆菌检出率为10.53%,检出最高的为焙烤及油炸食品25.00%,其次为米面制品(18.18%)、盒饭(8.22%)。沙门菌检出最高的为中式凉拌菜(12.50%),其次为盒饭(1.32%)。金黄色葡萄球菌检出最高的为沙拉(20.00%),其次为盒饭(6.25%)、中式凉拌菜(5.00%)。单核细胞增生李斯特菌检出率最高的为盒饭(2.96%),其次为米面制品(1.82%)。致泻大肠埃希菌未检出,样品均为散装食品,3个季度总的食源性致病菌的检出率差异无统计学意义(P>0.05)。结论云南外卖配送餐中细菌性污染严重,存在较大食品安全隐患,进一步加强相关食品的卫生监测及监管。
Objective To investigate the bacterial contamination in take-out and delivery meals in Yunnan Province and provide the basis for food hygiene monitoring in Yunnan Province. Methods According to “2014 Yunnan Province food safety risk monitoring program”, the detection methods of national standards were used to detect the health index bacteria and common food-borne pathogenic bacteria in the delivery and delivery meals of 16 prefectures and cities in Yunnan Province. Results were analyzed. Results Among 435 samples, the failure rate of hygienic indicator bacteria was 43.45%. The detection rate of Bacillus cereus was 10.53%. The highest detection rate was 25.00% for baked and fried foods, followed by rice products (18.18%) and packed lunch (8.22%). Salmonella detected the highest Chinese salad (12.50%), followed by lunch (1.32%). Staphylococcus aureus detected the highest (20.00%), followed by box lunch (6.25%), Chinese salad (5.00%). Listeria monocytogenes the highest detection rate of box lunch (2.96%), followed by rice products (1.82%). The diarrhea Escherichia coli was not detected, the samples were all bulk food. There was no significant difference in the detection rate of the total foodborne pathogens in the three quarters (P> 0.05). Conclusions Yunnan take-away delivery meal bacterial contamination is serious, there is a big food safety hazard, to further strengthen the relevant food hygiene monitoring and supervision.
