食品从种植、加工、包装、储藏、运输到销售,潜在的不安全因素贯穿于农田到餐桌的全过程。利用信息系统技术,建立从农田到餐桌全过程的质量安全可追溯系统是进行可追溯管理的有效方法。该项目以广东收获罐头有限公司“三叶牌”菠萝罐头的生产数据为基础,将网络信息技术与菠萝罐头生产实际相结合,构建一套果蔬罐头质量安全可追溯系统。通过对菠萝罐头生产工艺流程进行分析,找出菠萝罐头质量追溯关键点,通过追溯产品信息记录管理,利用数据库技术、网络技术和条码技术构建统一的追溯平台,实现对果蔬罐头生产企业的安全生产管理,并对消费者提供追溯信息。为加工过程中会发生原料混合的其它罐头食品生产质量追溯系统的建立提供借鉴。
