不知从何时起,北方人作为主食的面条也成了上海人餐桌上的宠儿。尽管“北佬儿”、“老侉”对上海的面,有“不筋道”、“没什么好吃的”非议,上海人还是乐啜不止。据统计,上海几千家专业面馆,每天要售出近百万碗面,还不包括主营酒、菜,兼营面食的餐馆。我常去的面馆有鸿瑞兴、东泰祥等。不过,此时我倒想起了几年前开张前向我咨询过的“家有好面”。
