目的监测乌鲁木齐市部分中小学附近的餐馆餐饮具卫生状况。方法随机抽取乌鲁木齐市四个区52所中小学附近388家餐馆所使用的餐饮具,大肠菌群的测定采用快检纸片法,烷基(苯)磺酸钠、游离余氯测定采用分光光度法,感官为目视法。结果四个区消毒设备的消毒满足率只有50%左右,餐饮具卫生总合格率为4%,其中天山区、沙依巴克区、水磨沟区和新市区餐饮具的卫生合格率分别为7%,10%,3%,0%。结论乌鲁木齐市中小学附近的餐馆所使用的餐饮具卫生状况不容乐观,餐饮馆急需增加硬件投入,提高从业人员素质,而卫生监督部门需要加强依法监督管理。
Objective To monitor the sanitary status of restaurants and tableware near some primary and secondary schools in Urumqi. Methods The tableware used in 388 restaurants near 52 primary and secondary schools in four districts of Urumqi was randomly selected. The detection of coliform bacteria was performed by the method of fast-test paper, sodium alkyl benzene sulfonate and free residual chlorine. Spectrophotometry Law, sensory as visual method. Results The disinfection rate of disinfection equipment in the four districts was only about 50%, and the overall hygiene rate of tableware was 4%. The qualified rate of hygiene in Tianshan, Shayibake, Shuimogou and new urban areas was 7 %, 10%, 3%, 0%. Conclusion The hygienic condition of the tableware used in the restaurants near the primary and secondary schools in Urumqi is not optimistic. The restaurant needs to increase the hardware investment so as to improve the quality of the employees, while the hygienic supervision department needs to strengthen the supervision and administration in accordance with the law.
