More and more chemicals have been found to inhibit chemical carcinogenesis. One of the most potent ones is 2(3)-BHA[2(3)-butylhydroxyanisole], which can inhibit the carcinogenic effects of various chemical carcinogens. Benson et al.’s study showed that 2(3)-BHA added to food can significantly increase the activity of GSH (glutathione) S-transferase, with the greatest effect on liver GSH S-transferase activity. Ethoxyquin can inhibit the carcinogenic effects of benzo(a)pyrene and it is also found to increase GSH S-transferase activity. As an important detoxification system, GSH S-transferase can catalyze the binding of various electrophilic substances and GSH, and active chemical carcinogens are all electrophilic substances.
