孙中山先生不但是一位伟大的政治家,而且对于发展中国实业建设,亦有着深刻的研究和精辟的见解。在《建国方略之一,孙文学说——知难行易》中,孙中山指出,中国自古以来就有较高的文明,表现在饮食和烹饪都比西方各国讲究和合理。他说:“中国常人所饮者为清茶,所食者为淡饭,而加以菜蔬豆腐。此等之食料,为今日卫生家所考得为最有益于养生者也。”这就高度评价了“清茶”在作为中国普通老百姓饮食中的重要作用。
