目的分析2013-2016年南通市食品安全风险监测中镉、铅、总汞污染物监测结果,了解近4年南通市食品中重金属污染现状,及早发现食品安全隐患。方法每年按照《江苏省食品污染和有害因素风险监测工作手册》的要求进行采样和检测。结果 2013-2016年共计监测16大类2 777份食品,超出国家标准限值30份,总超标率1.1%,超标集中在水产动物及其制品、蔬菜及其制品、食用菌及其制品、肉与肉制品、水果及其制品、调味品6类食品中,超标样品中,其中镉超标2.0%,铅和总汞均超标0.6%。监测的4年中,2015年金属污染超标率(2.7%)要高于其他3年。946份食品中镉检出率58.2%,其中镉含量超标19份,超标率2.0%;930份食品中铅检出率42.0%,其中铅含量超标6份,超标率0.6%;901份食品中总汞检出率50.6%,其中总汞含量超标5份,超标率0.6%。结论南通市食品中镉、铅、总汞污染程度较低,食品安全趋势总体向好,但仍要加强对南通居民平时膳食消费量较大的水产动物及其制品、蔬菜及其制品等食品的监测与监管,确保食品安全。
Objective To analyze the monitoring results of the pollutants of cadmium, lead and total mercury in food safety risk monitoring in Nantong City during 2013-2016 and to find out the status of heavy metal pollution in the food in Nantong City in the recent 4 years and to detect the hidden dangers of food safety as soon as possible. Method Every year, sampling and testing shall be carried out in accordance with the requirements of the “Jiangsu Food Pollution and Hazardous Factors Risk Monitoring Manual”. Results A total of 2 777 food items in 16 major categories were monitored over the period from 2013 to 2016, exceeding the national standard limit of 30 and exceeding the overall standard rate of 1.1%. Exceeding the standards was concentrated on aquatic animals and their products, vegetables and their products, edible mushrooms and their products, meat And meat products, fruits and their products, condiments six kinds of food samples, excessive samples of which cadmium exceeded 2.0%, lead and total mercury exceeded 0.6%. In the four years of monitoring, the exceeding rate of metal pollution in 2015 (2.7%) is higher than the other three years. The detection rate of cadmium in 946 foodstuffs was 58.2%, of which the cadmium content exceeded 19 and the over-standard rate was 2.0%. The detection rate of lead in 930 foodstuffs was 42.0%, of which the lead content exceeded 6 and the over-standard rate was 0.6%. Among 901 foodstuffs Total mercury detection rate of 50.6%, of which total mercury exceeded 5, exceeding the standard rate of 0.6%. CONCLUSIONS The levels of cadmium, lead and total mercury in food in Nantong City are relatively low, and the overall food safety trend is generally good. However, it is still necessary to strengthen the monitoring and evaluation of the aquatic animals and their products, vegetables and their products that are usually consumed by Nantong residents Monitoring and regulation to ensure food safety.
