本研究对陕西省131个农家小麦品种和148个育成品种的三个重要加工品质性状即籽粒硬度、粗蛋白质含量和全麦粉SDS沉淀值进行了测定。发现陕西省农家品种硬度较大而沉淀值偏低;育成品种硬度较小而沉淀值偏高。对这三个品质性状的相关分析表明,硬度与粗蛋白质含量、SDS沉淀值间呈极显著正相关,而SDS沉淀值与粗蛋白质含量之间不相关。综合三个品质性状,在系统聚类的基础上精选出两类典型的加工品质好的小麦品种,供育种工作者和食品加工者借鉴
In this study, three important processing quality traits of 131 farm wheat cultivars and 148 cultivated cultivars in Shaanxi Province, namely, grain hardness, crude protein content and SDS sedimentation value of whole wheat flour, were determined. Found that farmers in Shaanxi Province, a larger hardness and sedimentation value is low; bred varieties less hardness and sedimentation value is high. Correlation analysis of these three quality traits showed that there was a significant positive correlation between hardness and crude protein content and SDS sedimentation value, but there was no correlation between SDS sedimentation value and crude protein content. Combining the three quality traits, two types of typical wheat varieties with good processing quality were selected on the basis of systematic clustering for reference to breeding workers and food processors
