匙吻鲟是一种适于和植食性鱼类混养的食浮游动物和腐植碎屑的速生大型鱼类。其自然栖息地的气温差别很大(-10～+25℃),性成熟时间与地理纬度有关。养殖的雌鱼需经8年以上方可成熟。在自然水域中,每年4～5月份当水温达到13～16℃时开始产卵。体重10公斤雌鱼的繁殖力是6～10万粒卵子。最适孵化水温为14～18℃,18℃时胚胎发育需经260个小时。幼苗培育密度为5～10尾/升,育苗成活率约20～40%左右。培养15天后体重可达150毫克。
