目的探讨餐饮具集中消毒单位卫生监管新模式。方法运用德尔菲法制定了餐饮具集中消毒单位量化评分表,并通过近3年餐饮具集中消毒单位卫生监督数据的分析,将餐饮具集中消毒单位卫生监督检查通过量化评分表的形式将检查结果进行具体量化,从而确定餐饮具集中消毒单位卫生风险等级。结果 2014年餐饮具集中消毒单位卫生状况的整体水平较前有了一定水平的提高,量化评分表基本上能够覆盖卫生监督员日常对餐饮具集中消毒单位的监督检查中的要素,权重分配较为合理。结论以此为尝试建立餐饮具集中消毒单位卫生安全的预警体系的基础。
Objective To explore a new mode of sanitary supervision for the centralized disinfection unit of tableware. Methods The Delphi method was used to establish the quantitative disinfection unit quantification score table, and through the analysis of the hygiene supervision data of the concentrated disinfection unit of the tableware in the past 3 years, the results of the inspection were obtained by the health supervision and inspection by the centralized disinfection unit of the tableware. Specific quantification, thereby determining the concentration of disinfection catering units health risk level. Results In 2014, the overall hygiene level of centralized disinfection units of tableware increased to a certain level compared with the previous level. The quantitative rating scale basically covered the elements of supervision and inspection routinely performed by sanitary supervisors on the centralized disinfection units of tableware, and the weight distribution was more reasonable . Conclusion Based on this, we try to establish the basis of prewarning system of hygiene and safety for the centralized disinfection units of tableware.
