本文作者以1976年及1982年新疆自治区营养调查资料总结了维、汉、哈、回、蒙、柯六种不同民族、不同职业3805人的膳食构成特点。指出各族居民的膳食特点基本以素食为主,但不同民族饮食习惯不同,膳食构成亦不同。以牧业为主的哈、蒙、柯族(下称“牧民”)平均每天摄入的谷类、蔬菜及水果较以农业为主或居住在城镇的维、汉、回族(下称“农民”)为少,“牧民”平均每天摄入谷类、蔬菜和水果分别为482、82和45克;而“农民”则分别为586、382和174克。但“牧民”平均每天摄入的乳、肉类则比“农民”多,乳、肉类分别为239和89克,而“农民”分别为82和48克。故“牧民”
