建立了冷冻升华干燥过程中物料干燥层有效导热系数和有效质扩散系数的数学模型,并应用实验测得的脱水量计算出干燥层的有效导热系数和有效质扩散系数.据此数据计算出的干燥过程中物料内部的温度分布与实验测试结果基本吻合.“,”This paper e stablishes the mathematical model in calculating the effective thermal conductiv ity and the effective mass diffusivity of dried layer of beef undergoing freeze drying process.First,experimental measurements are done on the dehydrated quanti ty as well as temperature variations at different locations of the beef steak.Th en the effective thermal conductivity and the effective mass diffusivity are cal culated by applying the above mathematical model on the data of the dehydrated q uantity.These two coefficients are further used in the calculation of temperatur e distribution.The result is in agreement with the measurement,thus confirming t he correctness of the model and the values of the coefficients.
