为快速准确地定性判别猪肉糜中是否掺有鸡肉糜,在猪肉糜中添加不同比例的鸡肉糜,制备不同掺假样品74个,其中60个为掺有不同质量分数鸡肉的样品,14个为纯猪肉糜,并独立制备39个验证集样品,其中31个为掺有不同质量分数的鸡肉糜样品,8个为纯猪肉糜。在10000~4000 cm-1波数范围内进行光谱扫描,采用PLS-DA方法建立判别分析模型。结果所建判别模型对校正集和预测集的正确判别率均可达100%。表明近红外漫反射光谱可以提供一种快速鉴别猪肉糜中是否掺有鸡肉糜的方法。
In order to qualitatively and accurately determine whether chicken meat mixed with minced chicken meat, add different proportions of chicken meat in the minced meat emulsion, preparation of different adulterated samples 74, of which 60 were mixed with different mass fraction of chicken meat samples, 14 were Pure pork surimi and 39 validation samples were prepared independently, of which 31 were chicken minced meat samples with different mass fractions and 8 were pure pork minced meat. Spectra were scanned in the wave number range of 10000-4000 cm-1, and discriminant analysis model was established by PLS-DA method. Results The discriminant model built by the proposed method can correctly determine the correctness of both the calibration set and the prediction set up to 100%. It shows that near-infrared diffuse reflectance spectroscopy can provide a rapid method to identify whether chicken meat is mixed with chicken meat.
