美国哈佛大学公共卫生学院的科学家报告说,每天饮用两杯(200—400毫升)以上的白酒,并且在日常饮食中不注意多种食物的合理搭配,会使结肠癌的发病危险上升两倍。科学家们得出的这一结论表明,日常饮食中缺乏水果、蔬菜、鱼类和低脂肪食品本身就构成了结肠癌发病危险,而酒精作用更可能会加剧饮食结构问题的不利影响。 科学家指出,结构失调的饮食中缺少一种被称为“蛋氨酸“的重要物质——氨基酸以及对于形成这种氨基酸至关重要的叶酸,而酒精又会抑制人体吸收或生成叶酸的过程。有的人不吃食物光饮酒,更会造成身体需要的氨基酸和叶酸的严重缺乏。饮食合理搭配,即各种食物都要吃一点,才能确保人体所需要的营养物质,并可抑制酒精的部分作用。人们所需要的营养物质必须从食品中来,服用人工合成维生素片剂不能代替叶酸以其他营养成分最佳来源日常饮食,也无法抵消饮食结构失调的消极作用。
