香蕉是热带、亚热带主要水果之一,其味香肉甜,营养丰富,深受广大消费者赞赏。但却因果实采后不耐久藏,极易发生后熟与腐烂,使长途运输受到限制,影响了市场供应和出口创汇。我国广东、福建等省是香蕉主产区,每年有大批香蕉北运,由于贮运技术尚未完善,致使运输途中年损失达20%之多。因此,研究香蕉采后的贮藏防腐技术,是个亟待解决的课题。本文就二十多年来有关这方面的研究资料加以综述,以期能对香蕉贮藏保鲜工作有所帮助。
Banana is one of the main tropical and subtropical fruits with sweet and nutritious taste. It is well received by consumers. However, after the fruit is harvested, it is extremely prone to ripening and decay, which limits the long-distance transportation and affects the market supply and foreign exchange earnings. China’s Guangdong and Fujian provinces are the main producing areas of bananas. Each year, a large number of bananas are shipped northward. As the storage and transportation technologies are not yet perfect, the annual loss during transit is as much as 20%. Therefore, the study of banana postharvest storage preservation technology is an urgent issue to be solved. In this paper, more than two decades of research data in this area are reviewed in order to be able to banana storage and preservation work.
