以江苏省2000-2012年通过审定的84份常规粳稻品种及3份对照种为对象,研究江苏句容、海南2种生态条件下,各生态类型品种(中熟中粳、迟熟中粳、早熟晚粳、中熟晚粳)直链淀粉、蛋白质含量及食味值的变化。结果表明,江苏句容正季条件下,不同生态类型间直链淀粉和蛋白质含量差异显著,且随着生育期的延长而降低;在海南,不同生态类型间直链淀粉和蛋白质含量水平趋于一致。环境变化对江苏粳稻食味品质的影响十分明显,与江苏句容正季相比,在海南除中熟中粳稻食味值略有升高外,其他3种生态类型的食味值均极显著下降。
In this study, 84 conventional japonica rice varieties and 3 control cultivars approved in Jiangsu Province from 2000 to 2012 were selected to study the effects of two types of ecological cultivars (middle-maturing medium japonica rice, late maturing medium japonica rice, Early maturing late japonica, middle late japonica) amylose, protein content and taste changes. The results showed that there were significant differences in amylose content and protein content among different ecotypes in the positive season of Jurong, Jiangsu Province, and decreased with the extension of the growing season. In Hainan, the amylose content and protein content of different ecotypes tended to Consistent. The effects of environmental changes on the eating quality of Jiangsu japonica rice were very obvious. Compared with the Jurong positive season in Jiangsu Province, the food taste of middle-maturing medium japonica rice in Hainan increased slightly except for the Jurong positive seasons, but the food taste values of the other three ecotypes decreased significantly.
