以酪蛋白为底物测定了中华鳖胰脏、胃、肠等组织蛋白酶活性、最适pH和最适底物浓度。结果表明:胃、胰组织蛋白酶活性显著高于肠组织蛋白酶活性,且胃>胰>前肠>中肠>后肠;胃、胰和肠组织蛋白酶最适pH分别为2.2、6.2、7.6;胃、前肠组织蛋白酶最适底物浓度分别为1.2%、0.8%。
Using casein as substrate, the cathepsin activity, optimal pH and optimal substrate concentration of pancreas, stomach and intestine of Chinese soft-shelled turtle were determined. The results showed that the activity of protease in stomach and pancreas was significantly higher than that in intestinal tissue, and the stomach> pancreas> foregut> midgut> hindgut; the optimum pH of protease in stomach, pancreas and intestine were 2.2, 6.2 , 7.6; the optimum concentration of protease in stomach and foregut were 1.2% and 0.8% respectively.
