油炸食品是深受广大消费者所喜欢的一种方便食品,但是用于油炸食品的油脂不得反复使用。主要是因为经高温反复使用的油脂中的必需脂肪酸和维生素几乎全部被破坏,而且一些不饱和脂肪酸可产生聚合,生成一种大分子化合物,而这种化合物不可被机体吸收。也可形成一些可能致癌的化合物,一些科学实验证实,高温油脂喂饲动物后,可引起动物机体不同部位的肿瘤。
Fried foods are popular with consumers as a convenience food, but for the fried foods shall not be used repeatedly. Mainly because of the high temperature repeated use of essential oils and fats and vitamins are almost completely destroyed, and some unsaturated fatty acids can produce polymerization, generating a macromolecular compound, and this compound can not be absorbed by the body. Some compounds that may cause cancer are also formed. Some scientific experiments have confirmed that high-temperature oil-fed animals can cause tumors in different parts of the animal’s body.
