土壤中有机物的分解与合成过程,是一个极其复杂的生物化学作用。是由土壤微生物体内的酶(简称内酶)和土壤酶(简称外酶)共同作用的结果。土壤酶的种类很多,现今已测得的有数十种。酶是一种生物催化剂,具有高度的专一性,它参于生化过程中各个环节,同时酶又是一种蛋白质。当遇到不适合的酸碱度、电解质或高温时,都会抑制或破坏酶的活性,从而影响正常的生物化学作用,土壤酶的活性与土壤肥力有着密切的关系,测定土壤酶的含量,既可了解土壤肥力变化的状况,又可作为全面考察土壤肥力的生物指标。
