Grasshoppers are widely consumed in Mexico at rural communities and urban cities.At rural communities and small villages,insects intake are raw,gathered from the environment,at urban cities population consumption is mainly as snack processed by different techniques:toasted,fried,roasted,with chili sauce or just with sah and lemon and as a sweet covered with chocolate sauce.The present study was carried out to verify possible variations of nutritional macronutrients value of grasshoppers and to inform people the benefits in health they can provide.
