[Objective]The optimum conditions for the extraction of crude polyphenoioxidase (PPO) from shrimp were determined using response surface methodology (RSM).[Methods]A box behnken design (BBD) was used to investigate the effects of three independent variables,namely extraction time (t),the weight ratio of cephalothoraxe-to-PBS (R) and solid ammonium sulfate saturation (%) on the response,PPO activities.
