Storage exposes apple fruit to diverse,unnatural conditions expected to extend green-life,and,therefore,market availability while allowing for development of desired eating characteristics.Cold-storage regimes are directed towards delaying ripening or aging.However,unintended consequences of these strategies can include an array of conditions provoked by storage practices alone or in combination that can lead to anything from minor problems such as off-flavors to unmarketable defects such as necrotic peel or flesh tissue.Our work has focused on employing untargeted metabolic profiling to illustrate the extent of metabolic interplay occurring as a result of chilling stress,oxidative stress,storage duration,shelf-life and superficial scald development in Granny Smith apple peel.
