This paper reports for the first time a success in fabrication of edible nanofibrous film using electrospirming technique.Although our previous works demonstrated a high potential of egg albumen (EA) based film in controlled release application within human digestive system and that nanofibers possessing near zeroth order release pattern was excellent bioactive compound carriers,molecular chain structuring in fiber form of EA was impracticable due to its native globular molecule conformation.
