Gas chromatography-Mass spectrometry is, in all probability, one of the most successful techniques discovered in the last century.Searching the scientific literature, it comes out that the number of publications based on GC-MS applications has enormously increased: from 224 in 1980, till to 4560 in 2006.Today, GC-MS is widely employed in several fields of analytical interest.Although expensive, it is the easiest tool for structure elucidation, trace analysis, quality control, suitable for volatile compounds of different origins.In particular, GC-MS is the elective technique for flavor and fragrance analysis, where, unfortunately, due to the presence of molecules similar bv structure and pattern fragmentation, GC-MS finds one of its remarkable drawbacks.
