Pulsed electric fields (PEF) technology has been known as one of the most promising non-thermal processing techniques that can be utilized for inactivating microorganisms in liquid food products.As PEF technology is based on pulsed power technology, the switch with a high voltage and a high current capability is one of the key factors of a PEF system.Combining the advantages of MOSFET and bipolar, the use of IGBT was considered to be a cost-effective method of obtaining suitable PEF switching devices, if the series connection of IGBTs can be well done.
