The goal of this study was to prove the variations of storage quality of two kinds of fresh-cut characteristic fruits in Yunnan after processing by slightly acidic electrolyzed water.Two kinds of fresh-cut fruits (Zhaotong apple and Yunnan red pear) were treated with different ratio of samples to SAEW (1∶3,1∶5,1∶10 and 1∶20) and different dipping times (10 min,20 min,30 min and 40 min) and stored in 4 ℃ condition.During the storage period,the variations of vitamin C concentration,polysaccharose concentration,mass lose rate,pH value and aerobic bacterial count were analyzed.
