食品快速冻结是一个高耗能环节。常规快速冻结装置在运行8h 以后须停产除霜和重新降温,此过程不仅消耗大量水和电,同时大量加工人员待工使生产成本增加。一般该过程耗能占总耗能15%以上。实际表明,吹风式快速冻结加工食品平均单位能耗约为300kwh/t,因此降低快速冻结环节的耗能,降低加工成本是今后快速冻结装置的重要研究课题。利用冷凝热代替水使蒸发器连续(交替)除霜,即任何一台蒸发器关闭除霜,其余蒸发器均可以正常降温工作,实现快速冻结装置不停产连续生产,再辅以风机电机外置技术,利用外置电机热量除去传送带上的结霜技术和风机变频调速技术,因而较常规快速冻结装置单位能耗降低25%,同时节省大量冲霜水和人力资源,从而降低加工成本,提高产品竞争力,经济效益显著,应用前景可观。
