  Persimmon fruit can be divided into astringent and non-astringent types.The astringency is mainly caused by insoluble tannins.Astringent type persimmons are rich in soluble tannins even at maturity,thus postharvest deastringency are necessary to meet the acceptance of consumer.Many deastringent technologies have been successfully applied and extended,among which the hypoxia related CO2 treatment is the most effective.However,the molecular mechanisms of the persimmon fruit deastringency have rarely been studied.
