杏鲍菇,以食用菌柄为主,是食用菌重点发展品种之一。杏鲍菇品种分为两类:一为保龄球状,其子实体形态为菌柄基部膨大,向上渐细,顶部菌盖较小,仅较菌柄连接处直径稍张开,一般为0.3~0.8厘米;二为柱状菇,即其菌柄上下粗细基本相同,菌盖亦较小。前者形状好、色泽白、价值高,但生物学效率偏低,一般商品生产的生物学效率为40%~60%;后者产菇量较高,生物学效率一般在80%以上,高者可超过120%。现以柱状菇为例,介绍栽培管理技术要点。
