目的了解海水产品甲醛本底含量及动态变化,为制定海水产品甲醛限量标准提供依据。方法在浙江省宁波、台州和温州三地采集7种海水产品共203份样品,对不同储存时段、不同地域和不同品种的海水产品测定甲醛含量并分析。结果龙头鱼(整鱼)在4℃储存下不同储存时段的甲醛含量总体检测值为10.40~223.80mg/kg,中位数为68.05 mg/kg;在活体或冰鲜状态时甲醛检测值为(49.19±22.86)mg/kg,至120 h达到最高,为(102.96±60.01)mg/kg。黄鱼、带鱼、墨鱼、章鱼、鱿鱼和虾6种海水产品第三时段甲醛含量最高,为(1.79±0.94)mg/kg。宁波地区龙头鱼样品甲醛含量明显高于温州地区和台州地区(P<0.05);温州地区黄鱼、鱿鱼、墨鱼和虾4种海水产品甲醛含量高于宁波地区和台州地区(P<0.05)。控制地域因素后,墨鱼第一时段甲醛含量(2.48±1.34)mg/kg高于其他5种海水产品(P<0.05),章鱼甲醛含量最低(0.37±0.45)mg/kg。结论 7种海水产品有一定含量的甲醛本底值,且不同地域、不同品种和不同储存时间的样品甲醛含量不同。
Objective To understand the formaldehyde content and dynamic changes of marine products, and to provide the basis for the development of the standard of formaldehyde for marine products. Methods Totally 203 samples of 7 marine products were collected from Ningbo, Taizhou and Wenzhou of Zhejiang Province. The formaldehyde content in seawater samples of different storage periods, different regions and different varieties was determined and analyzed. Results The results showed that the formaldehyde content of fishes (whole fish) stored at 4 ℃ for different storage time ranged from 10.40 to 223.80 mg / kg and the median was 68.05 mg / kg. For formaldehyde in live or chilled state, the detection value of formaldehyde was ( 49.19 ± 22.86) mg / kg, reaching the highest level at 120 h (102.96 ± 60.01) mg / kg. The highest content of formaldehyde in the third period of yellowfish, octopus, squid and shrimp was (1.79 ± 0.94) mg / kg. The contents of formaldehyde in the samples of fishes in Ningbo were significantly higher than those in Wenzhou and Taizhou (P <0.05). The contents of formaldehyde in four marine products of yellow croaker, squid, squid and shrimp in Wenzhou were higher than those in Ningbo and Taizhou (P <0.05). After controlling the geographical factors, the content of formaldehyde in the first stage of cuttlefish was (2.48 ± 1.34) mg / kg higher than the other five kinds of marine products (P <0.05), and the lowest in the octopus was (0.37 ± 0.45) mg / kg. Conclusions The seven kinds of marine products have a certain amount of formaldehyde background value, and the formaldehyde content of samples in different regions, different varieties and different storage time is different.
