利用具有高分辨率和高灵敏度的毛细管电泳-电化学检测方法直接测定蔗糖及其水解产物的浓度随反应时间变化的规律.在HCI催化下,对不同温度时蔗糖的水解反应速率常数进行了测定,并求得反应活化能Ea为109.8kJ/mol.该方法比经典的旋光度测定方法更直观简便,结果令人满意.
Direct determination of the change of sucrose and its hydrolyzate concentration with the reaction time by capillary electrophoresis and electrochemical detection with high resolution and high sensitivity. Under the HCI catalysis, the hydrolysis rate constants of sucrose at different temperatures were determined, and the activation energy Ea was found to be 109.8 kJ / mol. The method is more intuitive and simpler than the classical method of measuring optical rotation, and the result is satisfactory.
