目的了解市售鱼糜制品中微生物的污染情况。方法对湛江市6种鱼糜制品共132份样品进行微生物指标检测。结果6种鱼糜制品(鱼丸、鱼香肠、虾丸、模拟蟹肉、墨鱼丸、烤鱼卷)的微生物超标率分别为19.35%、11.76%、14.29%、23.33%、10.53%、7.14%;袋装和散装鱼糜制品微生物超标率分别为3.45%,25.68%。结论模拟蟹肉的微生物超标率比其他产品高,散装比袋装产品微生物污染严重。
Objective To understand the microbial contamination of commercially available surimi products. Methods A total of 132 samples of six surimi products from Zhanjiang City were tested for microbial index. Results The over - standard rates of microorganisms in the six surimi products were 19.35%, 11.76%, 14.29%, 23.33%, 10.53% and 7.14%, respectively, for the fishmeal, fish sausage, shrimp balls, simulated crab meat, cuttlefish balls and The exceeding standard rate of microorganisms in bagged and surimi products was 3.45% and 25.68% respectively. Conclusion The over-standard rate of microorganisms in simulated crab meat is higher than that of other products, and the microorganisms in bulk than the sacked products are seriously polluted.
