目的了解章丘市城区餐饮业凉菜间卫生状况,促进餐饮业有序健康发展,保证消费者饮食卫生安全。方法依据《餐饮业食品卫生管理办法》制作凉菜应当符合的基本卫生要求,填写调查表。对餐饮具、砧板、刀具消毒效果检测。结果120个餐饮单位中,卫生许可证持证率100%;从业人员健康证持证率及卫生知识培训率97.5%;有空气消毒设施的大中型餐饮单位为100%,小型餐饮单位为55%;有二次更衣室和洗手消毒设施的占25.83%;有专人负责制作凉菜的大中型餐饮单位为78.75%,小型餐饮单位为32.5%;餐饮具消毒效果检测合格率大中型餐饮单位为92.92%,小型餐饮单位为79.58%,砧板和刀具消毒效果检测合格率大中型餐饮单位为75.62%,小型餐饮单位为53.75%。结论章丘市城区餐饮业凉菜间卫生状况令人担忧,卫生监督部门应进一步加大执法监督检查力度,严把卫生许可关。
Objective To understand the sanitary conditions of cold-dish restaurant in urban area of Zhangqiu City, promote the orderly and healthy development of the restaurant industry, and ensure the health and safety of consumers’ diet. Methods According to “Food Hygiene Management Measures for the food industry” to make cold dishes should meet the basic health requirements, fill in the questionnaire. Results Of the 120 catering units, the health permit rate was 100%; the rate of health certificate and health knowledge training of practitioners was 97.5%; the medium and large-scale catering units with air disinfection facilities were 100% and the small-scale catering units were 55% ; There are 25.83% of the second dressing room and hand-washing disinfection facilities; 78.75% of large and medium-sized catering units are responsible for the production of cold dishes, 32.5% of small-sized catering units; 92.92% , 79.58% for small catering units, 75.62% for medium and large catering units and 53.75% for small catering units for cutting boards and knives. Conclusions Zhangqiu City Catering industry, cold dish health is worrying, health supervision departments should further intensify the supervision and inspection of law enforcement, strict health permit clearance.
