长麺的制作和食用据史载始于宋代,至今已有千年历史,古代称“汤饼”有诗云“弥月汤饼席、云集尊与少”。就是描写婴儿满月酒席上的象征性食物。麺条的品种多种多样,如盘麺、切面、拉面、刀削面、筒头面,它们的制作方法各异,并掺入了机械加工。唯独宁波长麺的制作历经千余年,制作方法依旧保持传统的手工制作,任何机械不能代替。制作程序需经长麺师傅的揉、捏、搓、拉、盘、晒等多道手工工艺才能成型上市。鄞江镇的长麺也进入了“非物质文化遗产”目录,它的传承人
