我国食品部颁标准规定,葡萄酒中含铜量应为0.3~3.0ppm范围之内,含量过高会使酒质变浊缩短存放期,同时影响人体的健康。酒中铜的测定方法文献介绍较多,有比色法、溶出伏安法、微分脉冲极谱法、X射线荧光法及原子吸收光度法,但未见有离子选择电极电位法,由于电极法仪器设备简便,适用于中小型酒厂推广。我们采用SL-1型离子计和94—29型铜离子选择性电极做了系统的电极性能试验,测定葡萄酒中铜的线性范围可达0.1—5.0ppm,分析误差在±5%以下,变异系数在3%以内,回收率为87—105%。 (一)仪器与试剂
