“膳食纤维”这个词已经被越来越多的人所熟知,然而真正了解这种营养素的人并不多。疑问一:只有蔬菜的筋和口感粗糙的食物里才有纤维?纯属谣言。每个植物细胞都有细胞壁,而细胞壁的主要成分就是纤维素、半纤维素和果胶,它们都属于膳食纤维。所以,只要吃植物性的食品,必然得到纤维。此外,主食当中的纤维,也不仅仅是小麦麸皮那种口感粗糙的东西。豆类的纤维含量比粗粮还要高,而人们却并不感觉到刺口。
