目的:分析了解睢县超市销售及餐饮业的食用油卫生质量,为监督管理提供科学依据。方法:依据GB/T5009.37-2007食用植物油卫生标准的分析方法和《食品掺伪检测方法》中的食用油冷冻试验法进检验。结果:超市销售食用植物油各项合格率较高,但餐饮业食用植物油的问题较为突出,花生油和菜籽油的掺假掺杂率分别为57.02%和41.18%,特别是食堂、超市花生油的掺假掺杂率分别达60.49%、49.64%。棕榈油的过氧化值超标率为25.00%。结论:应加强对餐饮业,尤其是食堂食用油的监督管理力度。
OBJECTIVE: To analyze and understand the hygienic quality of edible oil in sales and catering industry in Juxian County, and provide a scientific basis for supervision and management. Methods: According to GB / T5009.37-2007 edible vegetable oil health standards analysis method and “food adulteration detection method” in the edible oil freezing test method into the test. Results: The qualified rate of the sales of edible vegetable oil in supermarkets was high, but the problem of edible vegetable oil in the catering industry was prominent. The adulteration doping rates of peanut oil and rapeseed oil were 57.02% and 41.18% respectively, especially in canteen and supermarket peanut oil The fake doping rate is respectively 60.49% and 49.64%. Over-standard peroxide value of palm oil was 25.00%. Conclusion: We should strengthen the supervision and management of the catering industry, especially the canteen edible oil.
