目的了解陕西省食品中蜡样芽胞杆菌的污染情况,为制定有效的监管措施提供依据。方法按照食品安全国家标准方法,2012年-2016年在陕西省10个地市的流通、餐饮服务环节采集食品样品,进行监测分析。结果 7类3 157份食品样本中检出蜡样芽胞杆菌469株,总检出率为14.86%,各类食品中均有蜡样芽胞杆菌的检出,乳与乳制品检出率最高,为20.00%,其次是婴儿食品,为15.57%。流通和餐饮环节的检出率分别为15.06%,14.65%,差异无统计学意义(P>0.05)。2012年-2016年各年份检出率分别为15.25%、15.58%、10.45%、19.05%及14.82%,不同年份检出率差异有统计学意义(P<0.05)。商洛市、西安市、榆林市及汉中市检出率高于平均检出率。结论陕西省食品中存在蜡样芽胞杆菌污染,相关监管部门应加强重视,预防食源性疾病的发生。
Objective To understand the contamination of Bacillus cereus in food in Shaanxi Province and provide the basis for the formulation of effective regulatory measures. Methods According to the national standards of food safety, food samples were collected from the distribution and catering service sectors in 10 cities of Shaanxi Province from 2012 to 2016 for monitoring and analysis. Results A total of 469 strains of Bacillus cereus were detected in 7 157 samples of foodstuffs with a total detection rate of 14.86%. Bacillus cereus was detected in all kinds of foodstuffs. The detection rates of milk and dairy products were the highest 20.00%, followed by baby food, 15.57%. The detection rates of circulation and catering were 15.06% and 14.65% respectively, with no significant difference (P> 0.05). The detection rates in each year from 2012 to 2016 were 15.25%, 15.58%, 10.45%, 19.05% and 14.82%, respectively. The detection rates in different years were significantly different (P <0.05). Shangluo City, Xi’an City, Yulin City and Hanzhong City, the detection rate is higher than the average detection rate. Conclusions There is Bacillus cereus pollution in food in Shaanxi Province. Relevant regulatory authorities should pay more attention to prevent the occurrence of foodborne diseases.
