William McDonovan lived in Tokyo as a child. One of his first memories was lying in bed at night and looking up at the wooden ceiling. Listening to two-wheeled carriages, they dunked in the city and then pulled them to the farms outside the city. In the morning, he would hear the voice of the carriage carrying fresh tofu. The 55-year-old eco-architecture designer said: “What was shipped was waste and food came in. It seemed like a very natural thing.”
