目的了解滨州市2015年食品中铅、镉、总汞、总砷元素污染情况。方法采集滨州市农贸市场和食品商店等环节的8个品种270件样品,用国标法进行元素含量的检测,按《食品中污染物限量》进行评价。结果 270份样品中有3份元素含量超过了国家限量,超标率为1.1%,合格率为98.9%。分别为120份蔬菜中有1份元素镉含量超过国家标准,30份软体动物中有2份镉元素超标。铅、镉、总砷3种元素都以鲜冻水产品的中位数最高。结论滨州市居民食品中重金属污染的问题不严重,但应加强蔬菜及水产品等食品重金属污染的检测和监管,降低食品重金属污染的风险。
Objective To understand the pollution of lead, cadmium, total mercury and total arsenic in food in Binzhou in 2015. Methods A total of 270 samples from eight varieties including farmers’ markets and food stores in Binzhou were collected. The content of elements was measured by the national standard method and evaluated according to the “Limit of Contaminants in Foods”. Results The content of 3 elements in 270 samples exceeded the national limit, the exceeding standard rate was 1.1% and the pass rate was 98.9%. Respectively, one of the 120 vegetables in the cadmium content exceeds the national standard, 30 molluscs in 2 cadmium exceeded. Lead, cadmium, total arsenic were the three elements of fresh frozen aquatic products, the highest median. Conclusion The problem of heavy metal pollution in food of residents in Binzhou is not serious, but the detection and regulation of heavy metal pollution in vegetables and aquatic products should be strengthened to reduce the risk of heavy metal pollution in food.
