在我的家乡——孝感北部孝昌县农村有许许多多的民间美食。如今事厨多年,日烹山珍海味、遍尝鸡鸭鱼肉,然而每每忆起家乡的美食,却总令人垂涎。现介绍其中两款,一并就教于方家。 一、发粑 这是一种类似馒头的面食,不过它却多了一个焦香酥脆的底壳。发粑是用农家自制的“酵子”发制的,成形后再经饧发,不加碱、不用糖,然而成品不但不酸,却还有一股浓浓的甜香味,泡软可口,壳香酥脆、营养丰富。就着稀饭、咸菜食之,更是别具风味。 制作发粑,首先要做好酵子。先将制好的新鲜米酒,加入适量干面粉揉成团,再制成50克一个的小剂子,经晒干或晾干后即成酵子。把它们用线串在一起,挂在通风处,随用随取,久贮不坏。 发面时,将干酵子用清水泡软(冬季用温水),加入面粉中和匀,揉成干稀适度的面团,放在陶制的面盆中,盖上湿布置于温暖的地方让其自然发酵。一般每个酵子可以发3~4斤面。冬季约经过6~7小时,夏季3~4小时,待面团起发一倍多时,再将面团加少许干粉揉匀,下成100克一个的面剂,搓成圆形,或出条后剁成方形,置于案板上,搭上湿布,让其饧半小时(冬季时间略长),至其体积增大近一倍时
