近年来,我国400多万吨的鱼产量中,由于加工和保鲜能力不足,每年大约有40万吨左右的鱼腐烂变质不能食用,大部分成为鱼肥。也就是说,这部分高蛋白原料既不能作为食物直接利用,也不能被家禽、家畜作为饲料,而是直接地作了植物的肥料。当然,成为鱼肥的鱼,一般都是质量不太好的下杂鱼,多数是体小,骨刺多、肉质不好、经济价值不很高;也有少量是优质鱼。这些鱼所以成为鱼肥,主要是七、八、九三个月气温高,微生物繁殖迅速,鱼体内酶的活性增加,造成了鱼的腐败。
