对穗甜1号籽粒发育中干物质积累,淀粉、脂肪、蛋白质、游离氨基酸、水溶性糖含量及水溶性糖组分动态变化的研究结果表明:在籽粒形成中水溶性糖含量呈单峰曲线,峰值约在授粉后的第12天,其组分有较大的变化,在籽粒形成初期,主要以还原糖为主,随着籽粒的不断发育,还原糖的含量不断降低,至青苞采收期,主要以蔗糖为主;淀粉含量的变化和干物质的积累均呈S型曲线;含N化合物总量及游离氨基酸含量变化由高至低且变幅大;蛋白质及脂肪含量的变化由低至高,但变幅较小。
